Cookie Baked Oatmeal Recipe!
This cookie baked oatmeal is worth all the excitement and literally tastes like cake! You can even make it dairy and/or gluten free. It’s also a single serving so no need to share 😉
You’ll need:
½ cup rolled oats
½ banana (the riper the better since this is used to add sweetness)
1 egg
¼ cup milk (cashew, almond, rice milk etc. Its your choice!)
Pinch of sea salt
¼ tsp baking soda
Dark chocolate chips
1-2 tsp raw honey or pure maple syrup (optional for sweetness)
1. Blend all your ingredients (except chocolate chips) until well combined. I use a magic bullet and it works a treat!
2. Pour mixture into a ramekin or oven-safe dish.
3. Add dark chocolate chips on top.
4. Bake at 170c for 20 minutes or until a toothpick comes out clean.
